Meet Our Producers in Chiapas

The Tenejapa region of Chiapas, Mexico is one of the most distinctive coffee-growing areas in the world. Nestled at elevations between 1,000 and 1,350 meters, the volcanic soils and cool mountain air create ideal conditions for growing exceptional coffee.

The People Behind the Coffee

Coffee in Tenejapa is cultivated by indigenous communities who have farmed these lands for generations. Their deep knowledge of the terrain and traditional farming practices produce coffee with a character you simply can’t replicate elsewhere.

The producers here grow Caturra, Typica, Costa Rica, and Marsellesa varieties — each contributing its own personality to the final cup.

The Process

After harvesting, the cherries are processed using the washed method:

  1. Cherries are depulped and placed in fermentation tanks overnight
  2. After fermentation, the parchment is washed clean
  3. The coffee is then sun-dried on patios for 12 to 18 days

This careful process preserves clarity and lets the regional character speak for itself.
